What if the rotation was where the prices change for a while but they are still sellable.

Like where the price for some items is higher for some time and then drops down to a lower amount while others increasing but you can still sell the others just for significantly less. Then we wouldn't have to worry about disposing of items from farms to stop them from over growing as well as balancing the sever a bit.
